Durum is the hardest of all wheats. Its density, combined with its high protein content and gluten strength, make durum the wheat of choice for producing premium pasta products.,4 Piece

Too coarse for pasta
I bought this after shopping for organic durum wheat flour. I read that semola flour that you can buy in Italy is a finer grind than the semolina flour found in the United States and that durum flour SHOULD be the fine grind of normal all purpose flour but just made of the different kind of grain. I was disappointed opening this up that it's an even coarser grind than semolina. It's close to corn meal texture. I'm going to try to grind it down finer in my food processor, but it's a bummer to have 4 bags of flour that I don't really know how to use. Love that it's organic though!

Makes delicious Belgium waffles!
Ground the wheat berries in my Vitamix, added some baking powder, olive oil, sea salt, Agave, and water. Poured in my Cuisinart waffle maker, and out came blonde, perfectly crisp, delicious waffles. Healthy and the kids love it!

Package was torn open
One of the packages of Great River Durum Flour was completely torn open upon receipt. The three other packages of flour were intact. The outer box was completely fine with no damage. This is too bad because I have ordered this item before and the durum flour is great tasting and useful in making pasta, pizza crust, and sandwich wraps! But a completely opened package of flour cannot be used. The seal was completely torn open and the flour must be thrown away. Such a waste! But safety and health concerns have priority.

Very Disappointed
This isn’t flour, it’s the whole grain, so it’s useless to me

Full of moths and webs.
I like my flower without bugs. One of three bags was really bad. Other two looked ok until I sifted them and there were webs in the sieve. Gross.

Fantastic Quality Durum Wheat Grain/Berries
I use my mill to grind the grain into flour for baking but what I really purchased this Grain was to make Bulgarian Boza, a Cultural Fermented Beverage. So delicious and addicting. Once you pass it through a sieve and then a milk bag, you are left with the most silky liquid, Boza. Never throw out the left over berries in the sieve for this makes the most amazing pudding like Hot Cereal or eat it as a cold dessert. No waste. I definitely recommend this whole grain.
